How to Cut an Onion without Crying



I think back to when I was young and my mom would be in the kitchen cooking dinner. I'd always know when she was cutting onions because I would be crying even across the house. I seemed to always be more sensitive to them than anyone else was in the house. Flash forward to my first job doing food prep for a local sandwich shop - guess who's job it was to slice the onions for the day?! I had to wear swimming goggles on my eyes to get through it so I could see enough to run the giant meat slicer we'd also use to thinly cut the onions.


Needless to say, I was delighted when I picked up a trick professional chef's use to cut onions while keeping the root of the onion more intact to avoid such a large release of acidic fumes that bring on the waterworks.
